Grand Cru Gioacchina – Caninese
A great oil with all the essence of the Caninese after 300 years. There are many, many years of these olive trees.
The attack on the nose is clear and is typical of the great Caninese variety: the cut grass, notes of artichoke, rosemary, green pepper and the freshness of the countryside in early spring.
Equally, on the palate, it is quite clear the right bitterness combined with artichoke and thistle tips is balanced by a round and pleasant spiciness underlined by a balsamic taste with a hint of coffee.
It never leaves the mouth and remains fresh and clean on the palate.
It can only be likened to Prospero’s authority in Shakespeare’s “The Tempest“.

On the nose, it opens with notes of green almond and artichoke and hints of golden apple and cinnamon.
On the palate, it is delicate and captivating, characterized by the balance between bitter and spicy (with a slight prevalence of the former), proposing the same olfactory sensations with a balsamic finish of medium persistence.

Where it is produced
This oil is produced from monoculture olives from centuries old Caninese variety olive trees that are grown in a small olive grove, located on a farm in the locality Gioacchina in the Municipality of Canino (Viterbo). The oil comes from 43 olive trees over 300 years old. This plot is elevated to the east.
The soil is originally volcanic and is particularly fertile and the pH is acidic and tends to be clayey.
