Olivo secolare all'alba negli oliveti I&P a Canino

About us

Before Rome,
before it all began,
there was olive oil.

In Canino, olive trees have been cultivated for three thousand years. We grow them to Transform Flavors into the Pleasure of Living.

I&P stands for Ione & Paolo.

Ione Zobbi, whose name graces the estate, was the life partner of Paolo Borzatta. Together, they left Milan for Canino, nestled in the heart of Tuscia, to rediscover the serenity of olive groves, reconnect with nature, and dedicate the years ahead to this land.

Ione passed away far too early. Paolo carried forward the vision born of the two of them and continues to pour his heart and soul into research and innovation, season after season, constantly perfecting our production methods.

Not everyday cooking oil, not mass-market supermarket oil. Paolo’s vision has always been distinct: to elevate extra virgin olive oil, through visionary ideas, meticulous technique, and uncompromised craftsmanship, to the very same echelon as the world's finest Champagnes and grandest Burgundies.

Each olive grove yields a single monocultivar. Different every year, each grove unrepeatable.

True richness lies not in a single oil. It lies in the infinite nuances from one oil to the next.

The Terroir

Between the sea and the volcano, in the heart of Etruria.

To the southwest, the Tyrrhenian Sea carries moisture and salt breeze inland. To the northeast, the Lake Bolsena volcano has enriched the plains with tuff, volcanic lapilli, and minerals. In between lies Canino: clay, sand, and rock, microclimates that contradict and complement each other.

This is where the Caninese grows, the variety that takes its name from our town and has defined the olive oil of this land for centuries.

"The oil is already inside the olive.
The master miller's task is to extract it without betraying it."
I&P Philosophy

The Method

A single variety is a personality.

The true value of a monocultivar is not its purity in itself. It is its personality. One leaf of lettuce, one hundred single-variety extra virgin olive oils: one hundred completely different dishes.

Learning to distinguish them, pairing them with the right foods and the right moments: this is an education in pleasure that, once begun, never ends. Details are not a luxury. They are the point.

01
Precise Harvesting

Each olive grove is harvested at its own ideal moment of ripeness.

02
Milled within 4 hours

The limit that separates a great oil from a mediocre one. Without exceptions.

03
On-Site Olive Mill

Designed with Mori Tem and Alfa Laval. Continuous two-phase cycle, maximum polyphenol concentration.

04
Temperature-controlled

Every cultivar receives its own tailored treatment. Zero standardization, every evoo is unique.

They must be tasted.
