What it's like

A fresh, balanced oil that doesn't cover the dish

Bitterness and pungency hold each other in balance: it adds freshness and roundness without stealing the show.

On the nose

Cut grass

Artichoke and tomato leaf, the scent of fresh olives.

On the palate

Almond

Pine nuts and lettuce, with well-balanced bitterness and pungency.

The finish

Pepper

A clean peppery note that lingers, then makes room for the dish.

What to use it on tonight

  • 1
BruschettaWarm bread and a drizzle of N°1.
  • 2
Mixed saladsIts cut-grass aroma refreshes the leaves and lifts them without covering them.
  • 3
    Filleted fishRaw, just plated.
  • 4
Gourmet pizzaA drizzle as it comes out of the oven.

Our tip: Use it raw or at the end of cooking. Prolonged heat dulls the aromas that make it special compared with any other oil.

Gioacchina

From the olive grove

Gioacchina, where it all began

A south-facing valley on the edge of Canino, 14 km from the sea. Poor clay soil, dry summers and the cold tramontana wind in winter: this is where Caninese gets its character.

How it's made
  1. Organic farming. Organic fertilizer once a year, grass and prunings left on the ground to feed the soil. Treatments only when needed, with products approved for organic farming.
  2. Harvested in October, by hand with handheld harvesting rakes, as soon as the olives begin to change color.
  3. Milled within 4 hours in our own mill next to the olive grove, at controlled temperature, with immediate filtration.
  4. Stored in stainless steel under nitrogen, which protects it from oxidation, and bottled in dark glass.

FAQ

How long does an open bottle last?
It's at its best in the weeks after opening. Keep it away from light and heat, with the cap tightly closed.
Why 250 ml?
Because a great extra virgin olive oil should be enjoyed fresh: better a bottle you finish while it's at its peak.

We ship within 48 hours of your order. In Italy shipping costs 9,90 € and is free over 99 €. Outside Italy the cost depends on weight, and you'll see it in the cart before paying.
