What to use it on tonight

  • 1
    Grilled fishRaw, just plated.
  • 2
Risotto and pastaA drizzle at the end of cooking.
  • 3
Mixed saladsOn fresh leaves it brings almond and flowers.
  • 4
Soft cheesesOn stracchino or fresh caciotta.

Our tip: use it raw or at the end of cooking. Prolonged heat dulls the aromas that make it special compared to any ordinary oil.

Capo Terzo

From the olive grove

Capo Terzo, the highest cru

A south-facing slope at the top of a hill in Tessennano, 15 km from the sea. The tuff soil, relatively rich in nitrogen, and the winter tramontana wind give the oil intense, complex aromas.

How it's made
  1. Organic farming. Organic fertilizer once a year, grass and prunings left on the ground to feed the soil. Treatments only when needed, with products approved for organic farming.
  2. Harvested in October, by hand with handheld harvesting rakes, as soon as the olives begin to change color.
  3. Milled within 4 hours in our own mill, at controlled temperature, with immediate filtration.
  4. Stored in stainless steel under nitrogen, which protects it from oxidation, and bottled in dark glass.

FAQ

How long does an open bottle last?
It's at its best in the weeks after opening. Keep it away from light and heat, with the cap tightly closed.
Why 250 ml?
Because a great extra virgin olive oil should be enjoyed fresh: better a bottle you finish while it's at its peak.
When will it arrive?
We ship within 48 hours of your order. In Italy shipping costs 9,90 € and is free over 99 €. Outside Italy the cost depends on weight, and you'll see it in the cart before paying.
What if something goes wrong?
You have 14 days from delivery to return unopened items, plus a 24-month legal warranty. You can find full details in our Terms and Conditions of Sale.
