Bold, with well-balanced bitterness and pungency. It adds freshness and roundness to the dish.
This location is a south-facing valley at an altitude of 160 meters, on the outskirts of the town of Canino. To the south, the sea is visible 14 km away. The climate is typically Maremman: mild, but with summer droughts and strong north winds (tramontana) in winter. The soil is predominantly clayey and low in nitrogen, which likely contributes to the typical bitterness of the Caninese variety.
